THAI STYLE FRIED PRAWNS
Succulent, juicy prawns are seriously comforting. This recipe is the ultimate fast food dish, it’s the backbone of quality, Thai cuisine. We urge you, not to skimp out on a cheap quality flavoured oil, because it really gives the prawns its fragrant, garlicky flavour. The cooling flavours of the Kaffir lime leaves and garlic oil balance the pungent taste of the turmeric.
This is the perfect weeknight dinner, which requires very little preparation and very little cooking time. It has never been so easy and so delicious!
Serves 4-6 (as a sharing starter)
2 tablespoons Azada Olive Oil & Garlic
2 fresh Kaffir lime leaves
½ teaspoon turmeric powder
1 teaspoon sea salt
½ teaspoon soft brown sugar
1 kilo uncooked giant prawns, deveined with tails intact
Pour Azada’s Olive Oil & Garlic into a wok. Heat the oil over a medium heat. Once hot, add the Kaffir lime leaves, turmeric powder, sea salt and brown sugar. Allow to infuse into the oil for 30 seconds, stirring continuously.
Add the prawns to the wok. Gently cook, turning occasionally, until lightly golden, 4 – 5 minutes.
Transfer the shrimp to a serving platter and spoon the fragrant oil over the prawns and serve hot.
